Early access is what used to be called "Open Beta". The game is still far from finished, there will be bugs, features may not be implemented yet, and parts of the game can change.
While early access is a way for developers to get feedback and funding from the community, they are in no way beholden to the community to make changes based on that feedback. The developer is still free to make the game they want to make.
